CAULIFLOWER FRIED RICE

Cauliflower fried rice. Bursting with mouth watering flavors, this low carb version of your favorite fried rice is a cinch to make and downright delicious. Slightly sweet and nutty cauliflower is combined with vibrant veggies, scrambled eggs and soy sauce to create a perfectly balanced vegetarian meal. Perfect way to turn your favorite vegetable into a tantalizing meal that your taste buds will love.

WHAT IS CAULIFLOWER RICE?

You might be very familiar with this low carb version of regular rice – rice made from cauliflower. Although it’s easily available from the frozen aisle of your local supermarket, trust me, it’s super easy to make at home. Just chop the cauliflower, place it in the grinder, and pulse a few times to convert them into coarse grains. Make sure you don’t grind it too long, the rice will become soggy. And done! Super simple cauliflower rice to make your favorite fried rice!

INGREDIENTS

  • 1 large head cauliflower, separated into 1-inch florets
  • 2 tablespoons + 2 teaspoons oil
  • 2 eggs, whisked
  • 1 garlic clove, chopped
  • 1/2 cup chopped carrots
  • 1/2 cup green peas (I used frozen peas)
  • 1/4 cup chopped whites of spring onions (scallions)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • A pinch of red pepper flakes (red chili flakes)
  • Chopped spring onions (scallions), to garnish

INSTRUCTIONS

    1. Trim the cauliflower florets, cutting away as much stem as possible. Place florets (in batches) in the food processor. Pulse until the mixture resembles couscous. Set aside.
    2. Heat 2 teaspoons oil in a large wok or frying pan over high heat. Add eggs, and cook until scrambled, stirring occasionally. Remove egg from the pan and transfer to a plate.
    3. Add 1 tablespoon oil to the same pan. Once hot, stir fry garlic for few seconds or until aromatic. Add carrots, green peas and whites of spring onions (scallions). Stir fry for 4 minutes or until the vegetables are crisp tender.
    4. Add cauliflower rice, soy sauce, sesame oil and red pepper flakes. Stir to combine. Stir fry for about 2 minutes.
    5. Add eggs. Stir to combine. Heat through. Serve immediately.
    6. Garnish with chopped spring onions (scallions).

NOTES

– Customize this fried rice with shrimp (prawns) or chicken if you like
